Arunachal: RGU organises Special talk on “Fresh vegetables for health and boosting immunity”
More than sixty (60) participants attended the event.
GUWAHATI- The Department of Horticulture, Faculty of Agricultural Sciences, Rajiv Gandhi University (RGU), Arunachal Pradesh organized a special talk by an invited speaker Dr. Ranjit Chatterjee, Professor and Ex Head, Department of Vegetable and Spice crops, Uttar Banga Krishi Viswavidyalaya, West Bengal on the topic “Fresh vegetables for health and boosting immunity” on Tuesday, 28th November 2023.
Participating in the session, the Hon’ble Vice Chancellor of Rajiv Gandhi University, Prof. Saket Kushwaha, acknowledged the intrinsic link between the consumption of vegetables and overall health. He stated that vegetables, with their rich array of vitamins, minerals, and antioxidants, are the cornerstones of a nutritious diet.
He also stated that the journey from the farm to our tables involves intricate processes, and it is the realm of food processing that transforms raw produce into convenient and nutritious products, ensuring that the benefits of vegetables are accessible to all.
RGU Registrar, Dr. N T Rikam spoke on emphasizing the importance of consuming a diverse range of vegetables to ensure a wide spectrum of nutrients. Dean, Faculty of Agricultural Sciences, Prof. Sumpam Tangjang appreciated the organizers for choosing the relevant topic in today’s context as everyone is more conscious about the health post pandemic. He talked upon including diverse organic vegetables in our diet.
Head of the Department of Horticulture, Dr. Arindam Barman, also spoke and gave emphasized upon the importance of consuming “microgreens” as a source of nutrients for boosting immunity and overall health.

Expert for the session, Prof. Ranjit Chatterjee started the session with brief introduction on fresh vegetables as a treasure trove of essential nutrients which play a pivotal role in maintaining a robust immune system. Vitamins such as A, C, and E, along with minerals like zinc and selenium, are found abundantly in a variety of vegetables.
These nutrients act as powerful antioxidants, helping the body neutralize harmful free radicals and protect cells from damage. He also stressed upon the health of our gut which is intricately connected to our overall well-being, including the strength of our immune system.
He also spoke about opting for locally grown, seasonal vegetables which ensures the freshest produce with maximum nutritional value. Expert also talked about the importance of new term “microgreens” due to their concentrated nutrient content.

They are considered a healthful addition to a balanced diet. They may contribute to overall health and wellness by providing essential vitamins, minerals, and antioxidants. The lecture was completed with a very good interactive session between the participants and expert.
